How should the option be selected to purchase a 2U V key, such as a num pad enter key? I see only 1.75U & non-1.75U as options. 2U V would, I guess, be non-1.75U, but that just doesn’t seem right pricing.
All non 1.75U keys are the same price as you have correctly noted. The 1.75U nonstepped key was priced higher as it was a custom design not offered elsewhere on IBM Model F and M keyboards.
